You find this recipe in almost every Indian restaurant that is so wonderful with Naan Bread or Roti. Now you can also try this high class rich creamy curry made from Paneer (Indian Cottage cheese) and cashews at your home. 

 

Ingredients:

Mixed vegetables (Carrot, Peas, Potatoes, Cauliflower): 2cups boiled

Onions: 2 chopped

Ginger, garlic paste: 2 teaspoon

Turmeric powder: ½ tsp

Dhania (Cumin) powder: 2 tsp

Red chili powder: 1 ½ tsp

Garam masala powder: 1 ½ tsp

Milk: 1 cup

Whipping cream: 2 tbsp

Ghee (clarified butter): 3 tbsp

Salt to taste

Paneer (Indian Cottage Cheese): 1 cup

Tomato paste: 3 tbsp

Dried fruit & nuts (cashews, almond, raisins): 4 tbsp

Crushed pineapple: 4 tbsp (optional)

 

Preparation:

  1. Dice paneer (Indian cottage cheese, available at Indian grocery stores) into sugar cubed sized pieces and deep fry in oil and keep it aside.
  2. Heat ghee (clarified butter) in a pan, sauté onions, ginger garlic paste in low flame till the ghee separates from it.
  3. Add tomato paste, turmeric powder, dhania powder, red chili powder, garam masala powder, salt and a little water. Then add the boiled vegetables and let it boil for some time till the gravy is thickened.
  4. Then add milk and cream. Boil for a minute.
  5. Before removing from heat add the paneer pieces, dried fruit & nuts and pineapple.
  6. Garnish with coriander (cilantro) leaves.

 

Serving Suggestion:

 

Serve the delicious navaratna kurma with Indian bread naan or roti.
