A very classic south Indian style chicken dish that your must definitely try. It is found only in a few authentic south Indian restaurants.
Chicken: ½ lb (cut into medium size pieces)
Ginger & garlic paste: 3 teaspoon
Onion: 1 finely chopped, 1 diced into 4~5 cubes
Tomato: 1 chopped
Coriander powder: 2 teaspoon
Red chilies: 10
Mustard seeds: 1 teaspoon
Coriander (cilantro) leaves: ¼ cup chopped
Curry leaves: ¼ cup
Garam masala powder: 5 teaspoon
Turmeric powder - 2 tsp
Fenugreek: 1/4 tsp (optional)
Chicken masala powder: 5 teaspoon
Heat some oil in a pan, add the fenugreek seeds (optional), and add the diced onions to it. Sauté them till they turn golden brown.
Then add the red chilies, coriander powder and then add the ginger & garlic paste. Add the curry leaves finally.
Then grind them all well in a food processor or blender to make a smooth masala paste.
Heat some oil in a pan; add the mustard seeds, then, add the chopped onion. Sauté them till they turn golden brown.
Now add the chopped tomatoes, sauté them till they are cooked well. Then add the cut chicken pieces, and sauté them for about 2-3 minutes.
Add the ground masala paste, turmeric powder, garam masala powder and chicken masala powder. Then add the coriander leaves and salt.
Close the lid, and let it simmer for about 20 minutes. Keep stirring occasionally at equal intervals.
Serve the chicken fry hot with steamed white rice or Indian bread naan or roti and enjoy this south Indian recipe to your fullest.
