Ingredients :

  • Cashews - 1 Cup

  • Sugar 1-3/4 Cup ( change as per your desire quite important to make the sugar syrup consistency - string )

  • Rose Water - 3 or 4 Drops

  • Ghee if required

  • Saffron optional

Preparation :

  • Good quality whole cashews grind then using a blender to get a fine powder use a sieve to remove any lumps.

  • In a heavy bottom pan heat the sugar with 1/2 cup water in medium heat within 12 minutes your sugar syrap should thicken and should have a string consistency.

  • Now slowly add the cashew powder and start strring not long you will start to see the whole mixture be one and would't stick to the pan and you can add ghee saffron and rose water if desired.

  • Remove from the stove and let the dough rest for few seconds start kneading using a parchment paper would help as the dough will be not

  • Knead for about a minute or so untill you have a smooth surface

  • Using a roller pin (Chappathi Roller) roll out the Kaju Katli dough, cut them into desired shapes and serve
